  • 2 cups sushi rice
  • 3 tablespoons rice vinegar

  • 1 avocado, peeled, pitted, and sliced
  • 1 small cucumber, peeled and sliced
  • 8 imitation crab sticks
  • soy sauce and wasabi (optional)

  1. Rinse the sushi rice in cold water until the water runs clear. Drain and transfer the rice to a pot with 2 cups of water. Bring the rice to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 18–20 minutes, or until the water is absorbed, and the rice is tender.
  2. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar and salt are dissolved. Set aside.
  3. Transfer the cooked rice to a large bowl and add the vinegar mixture. Mix well and let the rice cool to room temperature.
  4. Place a sheet of nori on a bamboo sushi mat with the shiny side facing down. Wet your hands with water and spread a thin layer of rice on top of the nori, leaving a 1-inch border at the top edge.
  5. Arrange the avocado, cucumber, and crab sticks in a line on top of the rice.
  6. Use the sushi mat to roll the nori tightly around the filling, pressing gently as you go. Dampen the border of the nori with water to seal the roll.
  7. Repeat with the remaining ingredients to make 4–5 rolls.
  8. Slice each roll into 6–8 pieces and serve with soy sauce and wasabi, if desired.
