Soup Recipes. French onion soup is a classic dish that is perfect for a cozy evening at home. It is a rich, flavorful soup that is made with caramelized onions and beef broth, topped with a crusty baguette and melted Gruyere cheese. In this blog post, I will share with you a recipe for making French onion soup at home.

Ingredients:

  • 4-5 large onions, sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons flour
  • 8 cups beef broth
  • 1/4 cup brandy (optional)
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 baguette, sliced
  • 1 cup shredded Gruyere cheese

Instructions:

  1. Melt the butter and olive oil in a large pot over medium heat. Add the sliced onions and cook for about 20 minutes, stirring occasionally, until the onions are caramelized and golden brown.

  2. Sprinkle the flour over the onions and stir to combine. Cook for another 2–3 minutes to cook off the flour taste.

  3. Pour in the beef broth, brandy (if using), thyme, bay leaf, and season with salt and pepper. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30–40 minutes.

  4. While the soup is simmering, preheat your broiler to high. Slice the baguette and place the slices on a baking sheet. Toast the bread under the broiler for a few minutes on each side until lightly browned.

  5. Ladle the soup into oven-safe bowls and top each with a slice of toasted baguette. Sprinkle shredded Gruyere cheese over the top of each bowl.

  6. Place the bowls on a baking sheet and put them under the broiler for a few minutes until the cheese is melted and bubbly.

  7. Serve hot and enjoy!

Tips:

  • Use a mix of onions for more flavor. Try using yellow, red, and white onions.
  • Don't rush the caramelization process. It takes time, but it's worth it for the depth of flavor it adds to the soup.
  • If you don't have beef broth, you can substitute it with chicken or vegetable broth.
  • The brandy adds a nice depth of flavor to the soup, but it's optional. You can omit it if you prefer.
  • Make sure to use oven-safe bowls when broiling the soup.
