  • 2 cups of basmati rice
  • 2 pounds of chicken
  • 2 onions, thinly sliced
  • 1 cup of yogurt
  • 1 tablespoon of ginger paste

  • 1 teaspoon of coriander powder
  • 1 teaspoon of garam masala

  • 1 bay leaf
  • 4 green cardamom pods
  • 4 cloves
  • 1-inch cinnamon stick

  1. Wash the rice and soak it in water for 30 minutes.

  2. Heat 2 tablespoons of oil in a large pot. Add the cumin seeds, bay leaf, green cardamom pods, cloves, and cinnamon stick and fry for 1–2 minutes until fragrant.

  3. Add the sliced onions and fry until they are golden brown.

  4. Add the chicken to the pot and fry until it turns brown.

  5. Add the ginger paste, garlic paste, coriander powder, garam masala, turmeric powder, red chili powder, and salt to taste. Mix well and cook for 5 minutes.

  6. Add the yogurt to the pot and mix well. Cover the pot and cook for 10–15 minutes until the chicken is cooked through.

  7. In a separate pot, boil the soaked rice in 3 cups (0.71 l) of water until it is cooked at 80%.

  8. Once the chicken is cooked, remove it from the pot and set it aside.

  9. In the same pot, add 2 tablespoons of oil and spread half of the rice over the chicken.

  10. Layer the rest of the rice on top of the chicken and rice mixture.

  11. Sprinkle a handful of mint and cilantro leaves on top of the rice.

  12. Cover the pot tightly with a lid and cook on low heat for 10–15 minutes until the rice is fully cooked, and the flavors have melded together.

  13. Once the biryani is cooked, remove the lid and fluff the rice with a fork.

  14. Serve the biryani hot with raita, a yogurt-based side dish.
