Ingredients:
For the rice:
- Basmati rice: 2 cups (0.47 l)
- Water: 5 cups (1.18 l)
- Salt: 1 tbsp
- Bay leaf: 1
- Cumin seeds: 1 tbsp
For the meat:
- Beef or mutton: 1 kg (cut into small pieces)
- Yogurt: 1 cup (0.24 l)
- Tomatoes: 2 (chopped)
- Onions: 2 (sliced)
- Ginger-garlic paste: 2 tbsp
- Green chilies: 4-5 (chopped)
- Red chili powder: 1 tbsp
- Turmeric powder: 1 tsp
- Coriander powder: 1 tbsp
- Cumin powder: 1 tsp
- Garam masala powder: 1 tsp
- Salt: to taste
- Oil: 1 cup (0.24 l)
For layering:
- Fried onions: 2 cups (0.47 l)
- Fresh coriander: a handful (chopped)
- Fresh mint leaves: a handful (chopped)
- Saffron: a pinch (soaked in 1/4 cup of milk)
- Lemon juice: 1/4 cup
Instructions:
Rinse the rice in cold water and soak it for at least 30 minutes.
In a large pot, bring water to boil and add salt, bay leaf, and cumin seeds. Add the soaked rice and cook until it's 70% done. Drain the water and set the rice aside.
In another pot, heat oil and fry the onions until they turn golden brown. Add the meat and fry until it changes color.
Add ginger-garlic paste, chopped tomatoes, and all the spices except garam masala. Mix well and cook for 10–15 minutes.
Add yogurt and green chilies to the pot and mix well. Cover and cook for 30–40 minutes, or until the meat is tender.
Preheat the oven to 180 °C.
Take a large oven-proof dish and grease it with oil. Add a layer of rice and then a layer of meat mixture. Repeat the layers until all the rice and meat mixture is used up. Sprinkle fried onions, chopped coriander, and mint leaves on the top.
Pour the saffron milk and lemon juice over the layers. Cover the dish with aluminum foil.
Bake the biryani in the preheated oven for 30–35 minutes.
Serve hot with raita, salad, and chutney.
